The Dr. Atkins recipes usually are pretty varied and low card (of course). Have you tried them?


I have one recipe I once read on the internet that I really would like to share:

it is a feta garlic dip

You mix in a blender 1 cup of crumbled feta cheese and a half cup of sour cream, half cup of plain yoghurt and some garlic (I like loads of garlic so I use 3 cloves).... after which you blend the whole thing you season it with salt and pepper...

Extremely nice and some call it tzaziki

Here are some combinations that I enjoy:

Salmon and Cream Cheese

Mix dill and cream cheese and spread on thin strips of salmon. Then roll the salmon to form small hordeuves.

-------------------------

2 eggs
2 oz. firm tofu cut into 1/2 inch square pieces
2 oz cheddar cheese
Salt to taste

Scramble the eggs. When almost firm add the tofu and cheese and wait for the cheese to melt then serve.

No Low Carb Pizza Soup:
Ingredients:

* 1 (26 ozs) jar no-sugar-added spaghetti sauce (Hunts no added sugar Italian Baking Sauce or Classico Spicy Red Pepper Spaghetti Sauce)
* 1 cup low-fat milk (skim milk)
* 4 ozs low-fat cream cheese, softened
* Canadian bacon (low fat or regular) or turkey pepperoni
* mushroom/onion/ green pepper (or other pizza toppings)
* salt & pepper & Italian seasoning, to taste
* shredded mozzarella cheese, to taste
* grated parmesan cheese, to taste

Directions:

*

Place the first 8 ingredients in a medium Dutch oven; heat thoroughly.
*

Simmer on low heat until the cream cheese is well blended.
*

Remove from heat; serve and sprinkle with mozzarella and parmesan.
