What is a reasonable amount of carb intake per day?

Like I said, as long as you're doing over 60 gm per day, you probably won't have to worry about any warnings. Beyond that, I'd figure your carbohydrate intake by taking your total intake calories, and subtracting the calories from protein, fat and alcohol you plan to eat. Whatever's left you can 'spend' on carbohydrates! <grin>

When you get hungry, typically, your body isn't very picky. You can probably assuage the hunger with veggies just as effectively as carbs.

While some vegetables have some carbohydrates, they're not rich sources of carbs, like grains are.

There are low (and really-low) carb veggies (salad greens, bell peppers, tomato, broccoli...) & 'starchy' veggies (peas, corn, potatoes). (see any diabetes exchange list for ideas on which is which)

I eat a great big salad as my first course for dinner, after (usually) exercising in the late afternoon (less late now that it's getting dark so early, so I've had to move dinner up too!). It fills in the empty pit in my midsection, and keeps me from pigging out on the main course. I also have diabetes so I have to be careful about my menu choices and serving sizes, but the salad almost doesn't count

Yup. Here are some comparisions:

lettuce, 100 grams = 2.09 grams carbohydrates (1.4 grams fiber) carrots, 100 grams = 10.14 grams carbohydrates (3.0 grams fiber) peas, 100 grams = 14.46 grams carbohydrates (5.1 grams fiber) corn, 100 grams = 19.02 grams carbohydrates (2.7 grams fiber) potatoes, 100 grams = 25.23 grams carbohydrates (2.5 grams fiber) rice, 100 grams = 28.17 grams carbohydrates (0.4 grams fiber) macaroni, 100 grams = 28.34 grams carbohydrates (1.3 grams fiber) wheat bread, 100 grams = 47.20 grams carbohydrates (4.3 grams fiber)

As you can see, bread has significantly more grams of carbohydrate per 100 grams than other sources.
